The Grill

A Santa Maria-style woodfire grill built to commercial restaurant standards for permanent home installation.

304 Stainless Steel throughout. The same grade used in commercial kitchens and hospital equipment. It doesn't rust. It doesn't discolour. It will outlast the house it's installed in.

Cast bronze crankwheels with rosewood handles. Designed and cast to my own specification. Five spokes divide each wheel, forming a five-petal rose. They control two independent cooking surfaces, each on its own lift mechanism. Run them at different heights for different cuts.

Adjustable grid angle. 90 to 95 degrees. The tilt directs juices into a removable drip tray instead of flaring into the fire.

Woodfire brazier basket. Holds the wood while it burns down. Coals fall through the bottom and you scrape them under the grids to give you exactly the heat you need. Direct control over your fire, every time.

Built-in rotisserie support. Motor enclosure is integrated into the design. Motor and skewer sold separately.

Custom facia plate. Each side of the grill has a 250mm x 110mm panel for laser engraving. Your family crest, a botanical illustration, anything that matters to you. This grill becomes yours.

The BRIAR logo is cut into the brazier face. When the fire is lit, it glows through.

Installation
This grill requires a built enclosure with flue. You'll need a qualified builder or bricklayer for the surround. I provide full technical specifications and installation guidance. The base should include a layer of firebricks. The motor enclosure cavity is coredrilled after the main grill is installed.

This is not a portable unit. It is a permanent installation for a serious outdoor kitchen.
